Biscuits and Chocolate Gravy
Hot homemade biscuits smothered in a warm rich chocolate gravy.

Ingredients
Biscuits
- 2 C. flour sifted
- 4 tsp. baking powder
- 1 tbsp. granulated sugar
- 3/4 tsp. Kosher salt
- 1/4 C. shortening or lard
- 3/4 C. milk whole
Chocolate Gravy
- 1 C. granulated sugar
- 1/3 C. cocoa powder dutch-processed
- 2 tbsp. all-purpose flour
- 1/2 tsp. Kosher salt
- 1 ½ C. milk whole
- 3 tbsp. butter
- 1 tsp. vanilla
Instructions
Biscuits
- Preheat oven to 450˚F(232˚C).
- Into a large bowl sift together the flour, baking powder, sugar, and salt.
- Using a couple of butter knives or a pastry blender to cut the shortening into the dry ingredients until sandy and pea-sized.
- Slowly add the milk and form into a dough.
- Turn the dough out on to the countertop and gently roll to 1/2" thick.
- Use a round biscuit and push it straight into the dough. Do not twist.
- Place the pucks of dough into a greased cast iron pan.
- Bake for 10-12 minutes. Serve warm with butter.
Chocolate Gravy
- Into a medium saucepan add the sugar, cocoa powder, flour, salt, and milk.
- Use a whisk to combine.
- On medium heat bring the mixture to a simmer and cook until the gravy thickens.
- Remove from heat and add the vanilla and butter. Whisk to combine.
- Pour over hot split biscuits.
