This bacon analog looks A LOT like bacon and makes for a tasty crispy snack.
Equipment
- non-stick frying pan
Ingredients
Batter #1 – meaty streaks
- 1 C. wheat starch purchased or leftover from making wheat gluten
- 1 C. water
- 2 tbsp. soy sauce
- 1 tbsp. vegetable oil
- 1 tsp. liquid smoke
- 1/2 tsp. black pepper
- 1 tsp. nutritional yeast
- 1/2 tsp. Kosher salt
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1Β½ tsp. paprika
- 1/4 tsp. dragon fruit powder may be omitted or substitute beet powder
- 1 tsp. mushroom stock can you substitute mushroom powder
- 1 tsp. maple syrup
- 1/2 tsp. Marmite or Vegemite or Maggie seasoning or soy sauce
Batter #2 – fatty streaks
- 1 C. wheat starch purchased or leftover from making wheat gluten
- 1 C. water
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1 tbsp. vegetable oil
- 2 tbsp. vegetable oil for frying
- 1/2 tsp. Kosher salt
Instructions
Batter #1
- In a small pitcher or measuring cup with a spout, whisk all ingredients.

Cooking the bacon sheets
- Heat a non-stick frying pan on medium heat. Brush liberally with vegetable oil.
- Pour the batters in alternating stripes until the pan is covered in a thin layer of batter. Shake and tilt the pan to evenly distribute the batter.
- When the surface looks dry ~2-3 minutes, use a silicone spatula to loosen the edges. Quickly flip the pancake over to cook the other side ~1 minute.
- Transfer the cooked sheet to a plate to cool and repeat with the remaining batter.
Frying the bacon
- Heat a non-stick frying pan on medium-high heat. Add 1-2 tablespoons of vegetable oil.
- Add the bacon strips one at a time to the hot oil. Fry gently on both sides until crisp. Drain on paper towel and serve.
Notes
- A thinner pancake yields a crisper bacon.

I was wondering if you could use regular flour or add some gluten to this recipe to make a denser chewier “bacon”? Results looking to acquire: thicker “slices” and not so crunchy/crisp.
